  • Traditional banana bread

    Ingredients

    • 1/2 cup lard or unsalted butter
    • 1/2 cup white sugar
    • 1 teaspoon vanilla bean extract
    • 2 large eggs
    • 1¾ cups all purpose flour
    • 1 teaspoon baking powder
    • ½ teaspoon baking soda
    • ½ salt
    • 1 cup mashed banana
    • ½ cup walnuts
    • ½ chocolate chips

    Instructions

    1. Preheat your oven to 350°F Convention bake
    2. Grease a cast iron loaf pan with lard or butter
    3. Cream lard or butter and sugar together until light and fluffy
    4. Add one egg at a time waiting until fully combined
    5. Add Vanilla
    6. In a second bowl combine
      • Flour
      • Baking powder
      • Baking soda
      • Salt
    7. Add the mashed banana to the lard and sugar
    8. Ads the dry ingredients to the wet
    9. Stir in the chocolate chips and walnuts
    10. Pour into greased cast iron loaf pan
    11. Bake for 40 minute or until toothpick comes out clean
    12. Remove from loaf pan immediately and let cool on wire rack
    13. Once cooled to room temp slice and enjoy with healthy amount of salted butter on each slice or bag and freeze for up to 3 months
